In the kitchen with my big sister: ….pasta

My older sister Rafaela loves cooking and baking, and unlike me, she is actually really good at it. Starting from today Rafaela will be doing all of us the honour of sharing her recipes on the blog so we can all enjoy them. There are people out there that love to cook, people that just love to eat and people that love both. So this series of posts will cater for everyone! 🙂
Minor detail: if you are in the group of people that just likes to eat (like me) you will either have to find somebody to cook for you or you will just have to push through it (cooking I mean) so you can enjoy the delicious food.

Today’s recipe is called “…. past”. (I swear my sister is a lot more creative when it comes to cooking.)

Difficulty level: easy
Serves: 3-4 people
Preparation time: 20min
Cooking time: 30min


– approx. 400gr penne or fusilli pasta
– 1 medium egg
– 2 bouillon cubes (Knorr or Maggie cubes)
– approx. 200gr Edam cheese
– 4 large mushrooms
– 250ml single cream (fresh cream)
– 5-7 slices of bacon, ham or lountza
– optional: Anari cheese (if you know what I mean 😉 ) or parmesan cheese

Step 1: Cut mushrooms in small cubes and cook them in a pan (you will need a rather big pan because later on you will have to add the pasta to the pan), over medium heat with a little bit of oil until the half in size and turn a bit darker. (Preheat oven at 250oC)
Step 2: While mushrooms are cooking dice the bacon/ham.
Step 3: Once the mushrooms are done cooking take them out of the pan. If you are using bacon (which I highly recommend) cook it the same way you cooked the mushrooms. Put the mushrooms and the ham or cooked bacon in a bowl and set aside.
Step 4: Cook the pasta according to the package instructions (add a bouillon cube to the water for extra taste). Once the pasta is cooked keep some of the pasta water in a cup.
Step 5: Drain the cooked pasta and put it in the pan used to cook the mushrooms and the bacon.
Step 6: Turn the heat on to medium, add the egg and mix well.
Step 7: Add the cream with a bouillon cube (cut into small pieces) and mix.
Step 8: Add the mushrooms and the bacon/ham. Don’t worry if there is any excess liquid in the bowl, just add it to the pasta (it will give it more taste).

Step 9:
If the pasta seems a bit dry add the pasta water you saved earlier. Add a little bit at a time.
Step 10: Add a little bit of grated Edam cheese (and anari/parmesan), mix well and put it in an oven proof baking dish. Add plenty of grated cheese on top.
Step 11: Cook in preheated oven at 250oC for 10 to 15 minutes until the cheese turns golden and bubbling.

Step 12: Let it cool down for a few minutes. Add parmesan or anari cheese when you serve them and enjoy.
